Start with how much time you have

The Diploma in Baking & Patisserie runs for five months and covers 480 hours of training. That is a serious commitment. You are in the kitchen most of the week, and it is hard to hold a full-time job next to it.

The Baking Bootcamp is eight weeks. There are two of them, Basics and Advanced, and you can take one or both. If you are working, running a home, or testing whether baking is really for you, eight weeks is far easier to manage.

Then ask what you want at the end

If your plan is a job in a hotel or a professional pastry kitchen, or you want a qualification that is recognised outside India, the diploma is the one. It is assessed and certified by City & Guilds, UK, and the certificate is valid in more than 80 countries.

If your plan is to bake well for yourself, sell from home, or open a small bakery or café, the bootcamp will get you there faster. The Advanced bootcamp also includes sessions on entrepreneurship and setting up a bakery business, which the people starting their own place find most useful.

What you actually make

In Bootcamp Basics you work through more than 70 recipes: breads, quick breads, cookies, cupcakes, cakes, tea cakes, sweet and savoury tarts, choux, puff pastry, meringue, custards, chocolates and the basics of fondant. Food safety is part of it too.

Bootcamp Advanced has more than 100 recipes and moves into the harder things: croissants, wedding cakes, classic desserts, entremets, petit gateaux, petit fours, verrines and chocolate work.

The diploma starts from the basics of baking and goes through the techniques used in professional patisserie today, with the full 480 hours spent hands-on.
